Raw Energy Balls (Raw, Vegan, Dairy Free, Gluten Free)
1 cup medjool dates, pitted & chopped
1 cup dried apricots, chopped
2 cups mixed nuts*
2 tablespoons chia seeds
2 tablespoons flax seeds
2 tablespoons cinnamon
2 tablespoons raw cacao powder
1 tablespoon fresh orange juice
1/2 cup shredded coconut
1. Place nuts in food processor and pulse until ground.**
2. Add remaining ingredients and pulse until combined into a sticky dough.
3. Roll into balls and coat with shredded coconut. Store in the fridge.
* I used macadamias, cashews & almonds
** I didn't pulse mine finely - I left some larger chunks of nuts
